Foodie Friday: Chicken Almondigas


Almondigas (or albondigas) is a Filipino meatball noodle soup using miswa or misua, thin flour noodles. Find miswa in Asian grocery stores. We've checked the Asian aisle in other grocery stores and they don't usually carry it.

There are different versions of this recipe as each family or even region adapts it for their own. This is a chicken version. We don't usually see a chicken version because most would use ground pork, ground pork and diced shrimp, or ground beef. We've actually used ground chicken and even ground turkey. Both yummy!

Almondigas is a comfort food for many Filipinos!
Serves around 8

Ingredients:

  • 1 lb ground chicken
  • 1 sm onion, minced
  • 1 egg, beaten
  • 1 cup of miswa
  • 2 cloves garlic, crushed & minced
  • 1 stem green onions, finely chopped
  • 5 cups of chicken broth or stock OR water & chicken bouillon
  • salt and pepper to taste
  • Optional: eggs

Procedure:

  • Prepare the meatballs.
    • Combine the ground chicken, half of the minced onion, egg, and salt & pepper.
    • Shape into 1" balls.
  • In a large pot, saute the garlic and rest of the onion until onion is translucent.
  • Add the broth/stock and green onions. Bring to a boil.
  • Carefully add the meatballs.
  • Optional: Add eggs to poach in the broth/stock.
  • When the meatballs are done, add the miswa and gently stir for 1-2 minutes.
  • Remove from the heat. Serve hot.

Tips!
Don't want to make the meatballs? Ran out of meatballs? Use frozen meatballs! They work and they're good!
