Foodie Friday: Easy Pot Roast (Crockpot recipe!)


This is a crockpot recipe! We love the crockpot! Or any other slow cooker by any other name. Here's a Wiki history for you.
The Naxon Utilities Corporation of Chicago, under the leadership of Irving Naxon, developed the Naxon Beanery All-Purpose Cooker. Naxon was inspired by a story his Jewish grandmother told about...a stew [her mother made] called cholent, which took several hours to cook in an oven. The Rival Company bought Naxon in 1970 and reintroduced it under the Crock-Pot name in 1971. In 1974, Rival introduced removable stoneware inserts making the appliance easier to clean. The brand now belongs to Sunbeam Products.
A stew inspired the crockpot and a stew recipe we present to you!

Actually, one of our mothers found this recipe somewhere out there, but it also required an oven. She stuck all the ingredients in a crockpot instead. And we've been making this pot roast recipe for a while.

Slow Cooker Roast Beef served over rice

Serves 6-8

Ingredients

  • 4 lbs chuck roast, fat trimmed
  • 1 can (10 3/4 oz) cream of mushroom soup
  • 1 package dry onion soup mix
  • 6 russet potatoes, quartered
  • 6 carrots, peeled and sliced into 2" pieces
  • water as needed

Procedure
Dump it all in the crockpot! Hahaha, just kidding. Well, you can do that, but here's a few extra steps.

  • In a bowl, mix cream of mushroom, dry onion soup mix, and 1 cup of water.
  • Place chuck roast in crock pot
  • Add potatoes and carrots
  • Add soup mixture
  • If needed, add enough water so soup level is halfway up the crockpot
  • Cook until meat is done. 
We found that cook it on a low setting if you prepare it early morning or even overnight (the meat gets super tender!). Cook it on a high setting if you don't have as much time.

Tips!
We really have just dumped everything in the crockpot. We've even used fingerling potatoes and baby carrots so we don't have to chop or slice anything. We've also added sliced mushrooms about 30 minutes before the end of cooking time or serving.
